Spiced Garbanzos + Lentils
$25 ish meal
2 big yellow onions (chopped)
4 big carrots (diced)
3 medium red peppers (diced)
many (7-8) cloves of garlic (minced)
several (2-4) tablespoons garam masala (or some combination of Cumin, Coriander, Cardamom, Black pepper, Cinnamon, Cloves, Nutmeg… could also use some paprika and tumeric)
1 can crushed tomato
2 cans garbanzo beans (rinsed)
1 cup dried split yellow mung beans (optional. could also be red lentils or 2 cups) - rinsed and checked for debris
5-8 cups of water (ideally boiled)
a few table spoons of salt
a tablespoon of sugar
a teaspoon (or more) of red chili flakes
a few table spoons of Bragg’s Liquid Aminos
lemon cut into wedges (for recipe and to serve. one lemon is enough)
olive oil salt pepper
in one large stock pot
heat some olive oil
sweat the chopped onion (for 3-5 min)
add diced peppers carrots and garlic and steam/sweat for 2 - 3 minutes
add garam masala, chili flake and salt
add can of tomatoes stir for a minute or so
add water
stir
add sugar, bragg’s and squeeze of one lemon wedge
stir
bring to boil
add mung/lentilsw
reduce heat a bit and let cook for 10 ish min
add rinsed garbanzo beans
stir
let simmer/stew for another 5-10 min
enjoy over rice (or with bread) with some chopped parsley or cilantro and a squeeze of lemon
